Shrimp Pasta


My husband is a big fan of Cioppino and Zuppa de Pesce, and he likes it 'Fra Diavolo'. So every few weeks I say "What are you in the mood for this week?" and he usually winds up saying "Let's do some sort of shrimp pasta...Fra Diavolo!" I make a few variations, but this is how I did it tonight.




First, I sautè some onions and garlic with a little salt & pepper.
I could just do this for like 5 more minutes and throw it on some bread and be happy...I feel this is how every good dish begins!
Cut Grape or Cherry Tomatoes in half and add them in with some salt and pepper, so the tomatoes make a sauce but not a broth. 
Next, add the juice and zest of 1 lemon, ½ cup white wine, and ½ tsp. crushed red pepper.
Then, you let it cook and reduce. In order to make it into a sauce, use a ladle-ful of pasta water:
Yeah, looks the same...except with steam...
Add the Shrimp
At this point, add about 2 tsp. (or half of one of those small cans)of tomato paste...which I forgot to take a picture of (sorry!), and then add your pasta directly to the sauce.
Mix it up really well, and you may need another ladle-ful of water, and then you are ready to eat!

Shrimp Pasta

Ingredients

  • 1 Onion, chopped
  • 2 cloves garlic, chopped
  • 1 pint Grape or Cherry Tomatoes, halved
  • juice and zest of 1 Lemon
  • ½ cup white wine
  • ½ tsp. crushed red pepper
  • 2 tsp. tomato paste
  • ½ lb. Angel hair pasta
  • 1 lb. Shrimp
  • 1-2 ladle-fuls pasta water

Method

  1. Begin the sauce by sautéing the onion and garlic with a pinch of salt & pepper, in a deep-sided pan
  2. Chop tomatoes, and add to the pan with another pinch of salt & pepper, and the juice/zest of the Lemon. Allow to cook for a minute or two. Add the wine and red pepper. At this point, you can start the pasta water. Cook until reduced and thickened. 
  3. Once reduced add a ladle-ful of pasta water, shrimp and tomato paste. Mix well.
  4. Add the pasta directly to the sauce, with another ladle of water, if needed. Mix pasta in well and serve.
